Wow, another week has flown by which means I have next week's meal plan ready to go.
I am honestly loving the organization and planning that goes into weekly meal planning and food prep.
Maybe it is the OCD chick inside of me, or maybe its just the fact that a little organization goes a loooong way for a full-time working mama and wife.
Whatever the cause, I have been getting GREAT feedback from you lovely readers and I do not see my weekly meal plans coming to an end anytime soon.
In fact, I made a little splurge this week and treated myself to a custom May Book to organize recipes, grocery lists, and meal plans.
Have you ever heard of May Books?!... The website allows you to create and customize organization tools, planners, and note cards. The junior high school girl inside of me nearly squealed with delight upon the thought of organizing my life via a brand-spankin'-new planner and pretty colored pens just like I did back in the day (Yes, I am ridiculous I know).
But more on my new planner at a later point in time...
Let's get to next week's meal plan shall we?!
Dinners:
Sunday - Oven Roasted Chicken w/ Sweet Potatoes and Brown Sugar Glazed Carrots
Monday - Chicken Stroganoff w/ Peas and Mushrooms over Egg Noodles
Tuesday - White Chicken Chili w/ Garlic Flatbread
Wednesday - Basil Shrimp Pizza w/ Fresh Mozzarella and Ricotta Cheese and Roasted Peppers
Thursday - Spaghetti Squash Saute w/ Mixed Vegetables, Beans, and Chicken Sausage
Friday - Fish Friday! (Probably some salmon or haddock based on what is on sale at our local grocer)
Lunches: Dinner leftovers and/or Fresh Salads like this one that stole my heart last week
Breakfasts: Homemade Banana Pancakes and Oats w/ Blackberries or Strawberries
Snacks: 50-Calorie Chocolate VitaTops, Fresh Fruit (like strawberries & blackberries that are on sale this week), and Greek Yogurt w/ my favorite toppings like seen here!
Sunday Food Prep:
Batch Cook White Chicken Chili and Store In Fridge
Prepare Sauce for Chicken Stroganoff and Store in Fridge
Dice Sweet Potatoes
Slice Mushrooms, Green Peppers, Red Peppers, and Onions for Pizza and Stroganoff
Cook Spaghetti Squash and Store in Fridge
Make Breakfast Pancakes and Freeze
Clean and Slice Strawberries and Other Fruit
The Exercise:
Exercise: 60 Minute Spin Class and a 60 Minute Bootcamp Class
The Weekly Goals:
Goals: Wash, fold, and put away ALL the laundry and take some time to read a good book!

Dang! I will be at your house every night this week LOL! We are having waffles with fruit, chicken and rice stir fry, red beans and rice with kielbasa and chicken fajitas this week.
