The options with oatmeal are endless.
This past weekend, I had some family over for a Sunday brunch and I whipped up this recipe for baked oatmeal to share (and hopefully save a bit for breakfasts throughout the week too!).
This oatmeal was a HUGE hit. Everyone loved it, which unfortunately meant there was little leftover for me.
Now I have an excuse to make some more.
Honestly, the best part of this recipe is that it takes about 2 minutes to throw all the ingredients in a bowl, mix it all up, and then transfer it to a baking dish before placing it in the oven.
What's better than a deliciously hearty breakfast with little effort when you have a three month old baby who won't let you put her down?!... Not much I tell you!
Baked Blueberry Cheesecake Oatmeal
Ingredients:
2 Cups Old Fashioned Oats (Not Instant)
1 1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1 Cup Light Cream
1/4 Cup Brown Sugar
2 Eggs
1/2 Cup Cinnamon Applesauce
1 Tsp. Vanilla Extract
1 Tbsp. Ground Cinnamon
1 Pint Fresh Blueberries
2 Ounces Fat Free Cream Cheese, Softened
Directions:
1. Combine all ingredients except the cream cheese and blueberries in a mixing bowl and mix well.
2. Add softened cream cheese and gently incorporate it into the oatmeal mixture; add fresh blueberries and stir to combine.
3. Transfer the oatmeal to a greased 10" round baking dish and bake at 375* for 45 minutes.

ReplyDeleteI made this for my family this weekend with some other brunch goodies and I seriously thought no one would eat the oatmeal but me and my dad because my mom, sister, and Ty are not oatmeal fans.... but I was so wrong. This was so good, everyone loved it! Its so easy to make too! .... and even better the leftovers reheat really well for breakfasts later in the week too!
