What I Ate Wednesday: Cake Batter Pecan Toffee Cookies

Good Morning!

It sure has been a LONG time since I participated in What I Ate Wednesday.

Blame the fact that I have been super busy getting accustomed to being a new mom, blame my lack inspiration to make unique and healthy eats, or blame the craziness that was this past holiday season.

All I know is that I sure missed taking part in this weekly party.

I may not have a full day of eats to share today (it sure is hard to photograph every thing I eat between changing diapers, feeding, and trying to entertain a 6 week old!) but I do have a delicious dinner and cookie recipe to share.

It was getting late last night, dinner had yet to be made, and the Hubs and I needed dinner ASAP.

What to do, what to do?

Well, I whipped up a super simple shrimp scampi with whole wheat spaghetti, jumbo shrimp, broccoli, garlic, olive oil, parmesan cheese, and a little parsley.


The whole meal came together in less than 10 minutes and was mighty tasty!

And now for that deliciously simple cookie recipe I promised...

Cake Batter Pecan Toffee Cookies

 
Ingredients:
1 Box Butter Cake Mix
2 Hershey's Toffee Heath Candy Bars, Chopped
1 Cup Chopped Pecans
1/2 Cup Butter, Softened
2 Eggs
1 Tbsp. Water
 
Directions:
1. Combine boxed cake mix, pecans, and chopped heath bar; stir in butter, eggs, and water until full incorporated.
 
2. Chill dough in fridge for 30 minutes to firm.
 
3. Scoop into 1" balls of cookie dough, line on greased baking sheet, and bake at in preheated 350* oven for 10-12 minutes until golden brown.
 
Super simple, and super delicious!!!
