Yesterday's rainy day called for a warm and comforting dinner last night.
...Since I had to stay late at work, I missed my classes at the gym so I took advantage of my extra time at home to whip up an extra delicious mid-week dinner!
My hubby was quite please when he got home from work!
This recipe started off as a concoction of the random vegetables and ingredients that I had on hand and ended up being a very sucessful pot pie.
...In fact, I will definitely be remembering this recipe and making it again! (I am also super excited for leftovers at lunchtime today at work!)
The best part?
...Everytime you make this pot pie it can be customized based on leftover or miscellaneous vegetables that you have laying around. It is perfect for those days towards the end of the week when groceries may be low.
Chickpea Pot Pie
5 Small Potatoes, Washed & Cubed
One Handful of Brussel Sprouts
1 Cup Chopped Carrot
1 Cup Peas
1 Can Chickpeas, Drained & Rinsed
1 Cup Chopped Mushroom
1 Medium Onion, Chopped
2 Cloves Garlic, Minced
1 1/2 Tbsp. Butter Substitute
Two Cans of Cream of Mushroom Soup (Reduced Sodium is best!)
1 Package of Pillsbury Grand Homestyle Biscuits
1 Tsp. Thyme
1 Tsp. Parsley
1/2 Tsp. Sea Salt
1/2 Tsp. Black Pepper
1. Preheat oven to 350* and wash/chop all vegetables. Over medium/high heat add butter, onion, garlic, and potato to LARGE pan; let cook for 2-3 minutes. (I used a saute pan that was a bit too small for all the ingredients and ended up making quite a BIG MESS!... Learn from my mistakes people!!!)
4. Top with biscuits and sprinkle with a bit more seasonsing depending on your personal tastes; cook for 20 minutes or until biscuits are completely cooked (You do not want to eat undercooked biscuits, that is just GROSS!).
5. Enjoy this homecooked, comforting, and delicious meal in front of your DVR with your hubby! It's the perfect way to end a brisk fall day! Serves 6.
