Homemade Cinnamon Vanilla Nut Butter

Happy St. Patrick's Day! (to all of you who are actually Irish!)

When I opened my beautiful brand-spankin'-new food processor at my bridal shower last weekend, all I could think about was making homemade nut butter. Thoughts of peanut butter, almond butter, pecan butter filled the little brain of mine.

...and today was the day!

Within 5 minutes of getting home from work I have Tyler irritated with the constant abnoxious noise of my food processor chopping away at a hefty serving of almonds. It was GLORIOUS!

I promise you this, one taste of homemade nut butter will prevent you from ever buying boring, old Skippy or Jiff nut butters off the supermarket shelves.

The best part of homemade nut butter is that you can make any flavor you desire, vanilla, cinnamon, salted, CHOCOLATE! .... the options are endless!



I dare you to try this at home...


Homemade Cinnamon Vanilla Almond Butter


Ingredients:
2 Cups of Whole Almonds (for added flavor you can roast these in the oven for 20 minutes and let cool)
3 Tsp. Olive Oil
1 Tbsp. Vanilla Extract
2 Tbsp. Ground Cinnamon

Directions:
1. Add whole almonds and 1 tsp. of olive oil to food processor and blend on high for about 15 minutes (or until desired consistency). Every 2-3 minutes stop the processor, add a bit of olive oil, and scrap down the sides with a plastic spatula.
2. When there is 2-3 minutes left until it is done, add mix-ins such as vanilla and cinnamon.

After 1 Minute....






After 5 Minutes...






After 10 Minutes Add Some Vanilla...






& Shake that Cinnamon!






After 13 Minutes!






Done... after 15 Minutes!

Yes, it is really that easy. Yes, it tastes delicious.

I could not stop myself from sampling it repeatedly right out of the processor (with my fingers)!

I'm thinking once this jar is gone tomorrow I am going to experiment with CHOCOLATE NUT BUTTER!

... watch out Mr.Banana you might just have to be devoured with some nut butter next!
