Hello from Virginia!

Happy Monday!

My week started off on a fantastic note... I got to sleep in until 7AM this morning, which is late considering it was a work day!

On the other hand.... my coffee this morning was more like brown colored water. It was a disgusting pathetic excuse for coffee, but I survived!

Seeing as I am not at home and without my beloved kitchen (and Hubby-to-be of course!), I am not cooking and without new and delicious recipes to share with you this week. Instead, I am going to demonstrate my best methods to eat right while on a business trip!

First things first, room service is single-handedly the best invention under the sun. I woke this morning to my breakfast knocking at my door (a hot bowl of brown sugar oatmeal w/ a banana, wheat toast, and some water!) .... I must admit, however, it is tempting to order Mozzarella Sticks, Quesadillas, and other indulgences from room service seeing as it is all just a phone call away!

But, going away does not mean one should tarnish a healthy lifestyle by eating their weight in fat, greasy, foods. In fact, I am taking this trip to collect, get some MBA coursework done, get ahead with some work projects, EXERCISE, and rest (hopefully at some point I will rest, I was at work for over 11 hours today).

At this moment I just got back from the gym and am awaiting the arrival of my dinner... I will most certainly add a beautiful picture after it arrives!

But first, the easiest way to eat healthy on a trip is to bring your own snacks from home.

This way I can pack something to eat in between meals at work, as well as for when its late at night and I'm needed to chew something... I brought apples, oranges, Lara Bars, dried pineapple, and of course some dark chocolate!

Second, I perused the room service menu for meals that were veggie-friendly and not going to expand my hopefully shrinking waistline.

Last night I had this...
A Vegetable Wrap with Sprouts, Peppers, Pesto, Tomatoes, and other Veggies.... and a small side of fries (they were delicious!). I went to bed full, satisfied, and not feeling guilty about the meal I just had.

At work today for lunch I found some lentil soup and enjoyed it with a yogurt. It was fabulous!

But now it is time for tonight's dinner... they just came and knocked on my door to deliver it.
Tonight I'm having a personal tomato, basil, mozzarella pizza with a side salad (sans dressing) and a bottle of water. YUM!
